Abstract

The overall objective is to characterise recombinant mesophilic and thermophilic ferulic acid esterases and assess their value as tools in the food/health industries. Ferulic acid esterases are potentially useful because they can (i) release free phenolics from plant cell walls which may subsequently be used as natural precursors in the flavour/health industries, (ii) increase the enzymic digestibility of plant cell walls by removing phenolics and breaking inter- polymer cross-links with applications in the baking and animal feed industries. The molecular action of recombinant enzymes will be correlated with their specificity for cell wall structures and with their stability under industrial conditions. (Joint with grant 42/ABC11740.)
