Abstract
Texture, an important attribute of fruit quality, is determined by the properties of the cell wall. Changes in the structure of the cell wall during fruit development and enlargement may affect the firmness of ripe fruit. We propose to examine how expansins, a family of wall proteins implicated in plant growth, might influence fruit texture. A combination of biochemical and molecular techniques will be used to evaluate the involvement of expansins in fruit firmness in transformed strawberry.
